REVEALING KFC'S SECRET 'HOT AND CRISPY CHICKEN' RECIPE

Hello Folks,
This blog was planned for some days later but as the KFC has already declared 6th July as the 'National Fried Chicken Day', I can't think of a better day to do it than today. So, here I am....

 

I personally did a lot of R&D on this recipe to make it as much close as possible, and I believe that I made it. Let's start ;)


The most important part in this recipe is the chicken cuts, never buy curry cut chicken from any store like 24x7 or any other place, the reason behind is Curry cut chicken has 12-14 pieces of a chicken, but KFC has only 10 (except neck and liver) and for that you need to go to a butcher shop by yourself and advice the butcher, before they chop chop your chicken.



 
Once you get that chicken home, wash it properly and marinate it. Yes, just like tandoori chicken, it also goes through a marination of about 4 hours. Some KFC recipes over the internet says to marinate it in buttermilk (lassi) but that is not my pick for sure.

Once the chicken is washed and drained properly, take a fork and murder you chicken again like a killer. Do it to each and every piece, we are doing this to make sure that marinade reaches at the core of the chicken. You must have seen, a reddish color inside KFC chicken pieces, that's what we will be doing here. To marinade it, all you need is egg-whites, red paprika and Aginomoto (MSG). Take chicken in a bowl, add 3 egg-whites, 2 spoons of paprika and 2 spoons of Aginomoto, rub them properly and leave it for at least 4 hours.

THE SECRET COATING AND HOW TO DO IT ???

The secret coating believed to have 11 herbs and spices, but mine has only 6 which are:
  • Table Salt (2 spoons)
  • Oregano (1 spoon)
  • White Pepper (2 spoons)
  • Garlic Powder (1spoon)
  • Ginger Powder (1 spoon)
  • Basil (1spoon)
I personally believe that the 11 herbs and spices was a rumor spreaded by the KFC to divert people.

TO PREPARE THE COATING, take 2 cup of all purpose flour (Maida) and 1 cup of Corn flour, add all the above mentioned spices in it as per the mentioned quantity and it is ready.

Next step is to prepare the Egg Wash (in which we will dip the chicken so that the secret coating can stick to chicken. Take 3 egg-whites, 1 spoon of Salt, 1 spoon of Red Paprika and 1/2 cup of Milk in a bowl.


 

Now we are almost set to perform the MAGIC


Place the egg wash on your left and secret coating on right so that your right hand stays dry. Now, take a piece of marinated chicken, dip it into the egg wash first and then to the coating and put it aside in a plate. Do this with all the pieces.




THE TRICK IS THAT WE HAVE DO THIS TWICE |YES| TO GET THAT KFC TEXTURE AND CRISPINESS|
 Note: Never use cornflakes or bread crumbs for the texture as suggested in some youtube videos, it will result in discoloration. 


 After doing it for 2 times, now we are all set to fry the coated chicken. Put a pan on heat, pour some good amount of oil (Soybean Oil is recommended) so that the chicken can get easily drown in it.Deep Fry it for about 14
minutes on low to medium heat and last 1 minute on high heat.


Take it out now and enjoy it with ketchup and coke. Cheers!
